
Ingredients
3 – 4 over ripe bananas
75ml melted butter
1 egg
5ml vanilla essence
5ml baking powder
2.5ml bicarbonate of soda
5ml cinnamon
375ml flour
125ml brown sugar
Pinch of salt
Method
1. Preheat oven to 180C and line a muffin tray.
2. Mash the bananas.
3. Add the melted butter and egg, mix well.
4. Mix in the the vanilla essence, sugar and cinnamon.
5. Mix in baking powder, bicarbonate of soda and salt.
6. Gently fold in the flour.
7. Scoop batter into muffin liner and bake for 15 – 20 minutes until a skewer comes out clean.
8. Make 12 muffins.
