sweet-potato-muffins

Ingredients

375ml mashed cooked sweet potato
250ml flour
5ml cinnamon
2.5ml baking soda
2ml baking powder
2ml salt
125ml brown sugar
90ml oil
2 eggs
5ml vanilla essence
Sunflower seeds (optional)

Method

1. Preheat the oven to 180C.
2. Line a muffin tray with 12 muffin liners.
3. Combine all the dry ingredients in a bowl.
4. Add the remaining ingredients to the bowl and mix gently and combined (don’t over mix).
5. Scoop the batter into the muffin liners.
6.Sprinkle sunflowers seeds on top.
7. Bake for 25 – 30 minutes.
8. Makes 12 muffins.
