Ingredients
Pastry:
1 1/3 cups flour
70g cold butter
15ml caster sugar
2ml salt
About 50ml cold water
Blueberry mixture:
1 1/2 cups fresh or frozen blueberries
15ml flour
15ml icing sugar
Ice-cream to serve
Method
For the pastry:
1. Combine the flour, caster sugar and salt.
2. Add the butter and rub in with your fingers until a crumbly flour has formed.
3. Slowly add cold cold water and mix with your hand to form a dough.
4. Roll the dough out on a floured surface, the shape doesn’t need to be perfect.
5. Line a large baking tray with baking paper.
6. Place the rolled out dough on the lined baking tray.
For the blueberry mixture:
1. Place blueberries in a bowl and coat them with the flour and icing sugar.
2. Place the blueberries in the middle of the dough leaving enough space the fold the edges of the dough over.
3. Fold the edges on the dough over the blueberries leaving some of the blueberries visible in the middle.
4. Brush the edges of the pastry with some milk and scatter a bit of sugar on the edges.
5. Bake at 180C for 20 – 30 minutes until the pastry is golden brown and cooked through.
6. Serve with ice-cream.
