Ingredients

375ml grated zucchini (roughly 4 small zucchini’s)
125ml finely grated carrot (roughly 1 medium carrot)
125ml grated cheese
3 eggs
125ml flour
2ml baking powder
40ml oil
Salt
Pepper
Dried herbs
Paprika

Method

1. Preheat the oven to 180C and grease a small oven dish.
2. Beat eggs in a bowl.
3. Add grated zucchini and carrot, mix until combined.
4. Add the oil, flour, baking powder, salt, pepper and dried herbs. Mix until combined.
5. Mix through the grated cheese.
6. Scoop the mixture into the greased oven dish.
7. Sprinkle a handful of cheese on top. (optional)
8. Sprinkle paprika on top.
9. Bake at 180C for about 20 -25 minutes until cooked through.
10. Remove from the oven and cool off before slicing.
11. Store in the fridge.
