
Ingredients
4 cups corn, heated
1 small red onion, diced
5ml lemon juice
1ml cumin
2.5ml paprika
1/4 cup parsley, chopped
5ml butter
1/2 cup smooth cottage cheese
Salt
Pepper
Method
1. Place heated corn in a large bowl with onion and better. Mix together.
2. Add lemon juice, cumin, paprika, parsley, salt and pepper. Mix together.
3. Add a heaped tablespoon of cottage cheese and mix through.
4. Spoon bits of the remaining cottage cheese on top.
5. Store in the fridge.
