Ingredients
125ml maize meal (pap)
1 punnet mushrooms, sliced
1/2 onion, diced
250ml milk
125ml water
30ml butter, melted
1 tin creamed sweetcorn
2.5ml baking powder
2.5ml salt
2 handfuls grated cheese
Method
1. Preheat oven to 180C. Grease a large ovenproof dish.
2. Over medium heat, fry onions and mushrooms in a little oil until cooked. Set aside.
3. In a large bowl combine the cooked mushrooms, onions, maize meal, milk, water, melted butter, creamed sweetcorn, baking powder, salt and only one handful of grated cheese.
4. Mix until well combined and pour into the prepared dish.
5. Bake for 50 minutes then remove from the oven and scatter remaining handful of cheese on top and bake for another 10 – 15 minutes.
6. Serves 6 – 8.
