Ingredients
Cake
375ml flour
60ml cocoa powder
5ml instant coffee powder (optional)
5ml baking powder
2.5ml bicarbonate of soda
2.5ml salt
125ml sugar (250ml sugar if you prefer a sweeter cake)
10ml vinegar
5ml vanilla essence
250ml water
80ml oil
Icing
375ml icing sugar
30ml cocoa powder
5ml vanilla essence
5ml butter, melted
45ml water
Method
1. Preheat the oven to 180C and line a cake tin with baking paper.
2. In a bowl combine the flour, cocoa powder, coffee powder, baking powder and baking soda.
3. Add the sugar and salt.
4. Add the water, vinegar, vanilla, essence and oil and whisk until smooth.
5. Bake at 180C for 20 – 25 minutes until a skewer comes out clean.
6. Remove from the oven and let in cool off in the cake tin for about 10 minutes.
7. Turn the cake out on a cooling rack.
8. For the icing: Combine all the ingredients and mix until smooth. Adjust the consistency with water if needed.
9. Once the cake has completely cooled, spread on the icing and enjoy.
