Ingredients

340ml flour
2.5ml bicarbonate of soda
5ml cream of tarter
Pinch of salt
110g margarine, room temperature
185ml white sugar
1 egg
5ml vanilla essence
Drop of green food coloring
Cinnamon mixed with caster sugar for rolling

Method

1. Cream together margarine and sugar until light.
2. Add egg , vanilla essence and a drop of green food coloring.
3. Add all the dry ingredients and mix to form a sticky dough.
4. Place the dough in the fridge for at least 1 hour.
5. Preheat the oven to 180C and line baking trays with baking paper.
6. Roll teaspoonfuls of dough into balls and roll in cinnamon sugar.
7. Place balls on trays about 4cm apart and bake for 12 – 15 minutes.
8. Cool cookies on cooling racks.
9. This recipe can easily be doubled.
