microwave-chocolate-malva-pudding

Ingredients

For the batter:
60ml butter, melted
1 egg
30ml apricot jam
125ml brown sugar
125ml milk
60ml cocoa powder
250ml flour
10ml baking powder
5ml bicarbonate of soda

For the sauce:
125ml brown sugar
375ml milk
30ml cocoa powder

Method

1. For the batter, mix the butter, egg, jam and sugar together.
2. Add the milk, cocoa powder, flour, baking powder and bicarbonate of soda. Mix until the batter is smooth.
3. Pour the batter in a greased microwave proof dish.
4. Microwave on high for 5 – 6 minutes. (the cooking time depends on the strength of your microwave).
5. For the sauce, add all the ingredients into a saucepan and heat until the sugar has melted.
6. Poke holes in the sponge with a fork and pour the hot sauce over while the sponge is still hot.
7. Let it stand for about 15 minutes for the sauce to soak in.
8. Enjoy with custard, vanilla ice-cream or cream.
