Ingredients
250ml flour
20ml baking powder
Pinch of salt
150ml sugar
2 eggs
150ml oil
150ml milk
5ml vanilla essence
Method
1. In a bowl combine eggs, oil, sugar, milk and vanilla essence. Mix well,
2. Add the flour, baking powder and salt. Mix until just combined.
3. Line a 2 litre microwave safe dish with a paper towel.
4. Pour the batter into the dish over the paper towel.
5. Microwave on high for 5 – 6 minutes. (the cooking time depends on the strength of your microwave).
6. Once cooked, remove from the microwave and let it stand for 5 minutes.
7. Tip the cake out on a cooking rack and peel off the paper towel.
8. Let the cake cool completely and top with the toping of your choice. I used vanilla butter icing and sprinkles.
